The scoop on farm fresh from Sarah’s Coop

I made omelets for decades just mixing the eggs a bit in one bowl. Then I got a cooking tip from, of all places, an episode of The Big Bang Theory, in which Raj said the secret to his fluffy omelets was whisking the whites separately. Silly source, but sound advice. Unless I’m in a hurry, I usually separate whites and whisk them to a froth.
