The soda gun was cleaned during this inspection. The interiors of the two microwave ovens, food contact surfaces, were observed to have food residue and were not clean to sight and touch. The microwaves were cleaned during this inspection. Non-food contact surfaces (fan guards in walk-in cooler) not cleaned at a frequency to preclude accumulation of dust. Final rinse temperature measuring gauge is not functional on the mechanical dish washing machine. Food facility does not have available sanitizer test strips or a maximum registering thermometer to determine the final rinse temperature of the unit. Lights located on the ceiling in the kitchen area are not shielded or shatter proof.
