Items were dated during this inspection. The facility does not have an employee that has their Food Employee Certification available at this store. The employee that they had certified is not always in this store or available to employees at this facility. The manager stated that they will get an employee certified for this store within 90 days. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the McCray refrigeration/freezer units. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. The top outside surface of the Vulcan pizza oven has a build-up of dust/flour approximately 1/8 inch thick. The top of this oven was cleaned during this inspection.
