The following are recent Lackawanna County restaurant inspection reports from the Pennsylvania Department of Agriculture. According the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. Bulk food ingredient storage containers in the bakery area are not labeled with the common name of the food. There was no sign indicating that some produce items contain a food grade wax. A sign was posted during this inspection. Plastic lids for bulk food ingredients in the bakery area are cracked. No sign or poster posted at the hand-wash sinks in the deli area to remind food employees to wash their hands. Signs were posted during this inspection. The person in charge stated that she is in the process of completing a course. Observed wet wiping cloth in deli prep area, not being stored in sanitizer solution. Cloth was placed in sanitizer solution during this inspection. Chili was held at 115&#176;F, in the hot hold area, rather than 135&#176;F or above as required. It was determined that the chili was in the unit for less than one hour, therefore the chili was reheated to 165&#176; for 15 seconds during this inspection. Reviewed procedures for the re-heating of foods prior to placing in hot hold equipment. An insect control device (fly strip) located in back area with potential to contaminate food, equipment. Violations: Back of oven and wall have an accumulation of dust. Wall behind pizza boxes has cracks exposing sheet rock material. Women&#8217;s toilet room is not provided with a covered waste receptacle for sanitary napkins. Dust buildup on the exhaust fan in the wall above the storage rack in the back room. Violations: Temperature measuring device for ensuring proper temperature of equipment is not available in the baine marie; the Kenmore upright freezer, on left, and the chest freezer, by the upright freezer, in the back room. Old food residue on the can opener blade and on some utensils in the cook line prep table drawers. The can opener and utensils were cleaned. Ice buildup on the shelves in the upright Kenmore freezers. Old food residue and grease on the tray on the table shelf, adjacent to the stove, and on the sides of the table. Outdoor storage area for refuse in not non-absorbent flooring, such as concrete or asphalt. Violations: Microwave oven had old food debris and splash on interior ceiling. Observed clean food equipment stored in kitchen area directly on the floor, and not 6 inches above the floor. The hand-wash sink in the kitchen area was blocked and not accessible at all times for employee use.
