The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. Violations: The food facility does not have the original certificate for the certified food employee posted in public view. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the reach-in refrigerator in the waitress service area. Ambient temperature was 39 degrees F. The facility does not have a maximum temperature thermometer, or test strips available to test the water temperature of dish machine to ensure that the temperature gauge is functioning correctly. The facility obtained test strips during this inspection. Food facility does not have available, in the bar/kitchen areas, sanitizer test strips or test kit to determine appropriate sanitizer concentration. The facility obtained test strips during this inspection. The hot water used for sanitizing in the mechanical ware washing machine did not reach 180 degrees F (or 165 degrees F for stationary rack). The temperature gauge registered 115 degrees F. The inspectors test strip indicated that the water temperature was less than 160 degrees F. The facility called the repairman who came and replaced a heating element in the dish machine during this inspection. Cleaned and sanitized utensils located in dish wash area, are stored with food contact surfaces/food or lip area exposed to hand contact when retrieved by food employees. The utensils were turned upward by by an employee wearing gloves. The employee rest room is not provided with a covered waste receptacle for sanitary napkins.Wycallis Elementary School, Conyngham Avenue, Dallas, Jan. 21. Food utensils in counter area observed stored in a container of water which is not maintained at 135 degrees F. Utensils were removed from container during inspection. Observed wet wiping cloths in prep area, not being stored in sanitizer solution. Wiping cloths were placed in sanitizer solution during inspection. Observed surface above and behind dispensing nozzles on the soda machine with an accumulation of syrup residue. Surfaces were cleaned during inspection. Observed surface above shaft on drink mixer with an accumulation of of old food residue. Surface cleaned during inspection. Food employee observed storing clean food equipment while wet, and not allowing time for draining and/or air drying. Observed a buildup of black residue in the two-bay sink in counter area. Observed 15 old rodent like droppings in basement storage area. Area cleaned during inspection.Red&#8217;s Subs and Pizza, 5918 Main Road, Hunlock Creek, Jan. 21. Regular inspection; in compliance. Violations: Deli meats stored in refrigerator open with no covering.Deli meats were covered during this inspection. Raw eggs stored above ready- to-eat celery in the refrigerator. Eggs were placed on the bottom shelf during inspection. Observed a small amount of pink slime on the inside surface of the ice chute on the soda dispensing machine. Chute was cleaned and sanitized during this inspection. Observed a buildup of static dust on the fan guard inside of the two-door Pepsi cooler located in the self service area.<style>
