The following are recent Lackawanna County restaurant inspection reports from the Pennsylvania Department of Agriculture. According the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Regular inspection; in compliance. Violations: Raw shell eggs stored above lettuce and Canadian bacon in the small refrigerator on the cook line. The eggs were placed on the bottom shelf. Food employees observed in cook area, not wearing proper hair restraints, such as nets or hats. Visors were donned.Silver Spoon Diner, 108 S. State St., Clarks Summit, April 6. Regular inspection; in compliance. Violations: Sauce was held at 123 degrees F, in the hot holding area, rather than 135 degrees F or above as required. The sauce was reheated to 165 degrees F during this inspection. Refrigerated ready-to-eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. Reviewed and left Pennsylvania Department of Agriculture&#8217;s handout on date marking with the person in charge. Loose/broken rubber door gaskets observed on the walk-in freezer. Non-food contact surfaces (fan guards in the walk-in cooler) not cleaned at a frequency to preclude accumulation of dust. The slicer was taken apart and cleaned during this inspection. Lights are not shielded or shatter proof over the cook line area. Food facility has an original certificate posted, but the location is not conspicuous for public viewing. Violation: Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 parts per million, and not 50-100 ppm as required. The owner called the repair service, who came during the inspection.
