The following are recent Lackawanna County restaurant inspection reports from the Pennsylvania Department of Agriculture. According the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Also, at the time of the inspection violations are recorded but are often corrected on site prior to the inspector leaving the establishment.&#8221; The information is taken from the inspection database at www.eatsafepa.com. Regular inspection; out of compliance. Violations: Duties of the person in charge are not being followed as evidenced by this non-compliant inspection. Mold on rice pudding in four, one pound containers in the dessert bain marie in the waitress area. A waitress discarded the pudding. Raw shell eggs and raw egg mix stored above cheese and vegetables in the Continental refrigerator in the basement. The eggs were placed on the bottom shelf. Ambient temperature in the dessert bain marie is 50 degrees F and rice pudding is 50 degrees F. The bain marie was shut down for repair and product placed in another refrigerator. Vegetables 53 degrees F and ambient temperature 53 degrees F in the Continental refrigerator in the basement. The refrigerator was stocked this evening and food was placed in the walk-in cooler. Shall maintain cold food at 41 degrees F or below. Temperature measuring device for ensuring proper temperature of equipment is not available in the Whynter freezer on the rack adjacent to the bread warmer and in the bain marie at the start of the cook line. Thermometers were placed in the freezer and bain marie. The dessert bain marie, in the waitress area in the kitchen, and the Continental refrigerator in the basement are not maintaining cold food at 41 degrees F or below. Dishwasher test strips, to monitor the final rinse temperature, are not available. Buildup of ice and old product on the interior surfaces of the Whynter freezer on the rack by the bread warmer. The freezer was cleaned. No sign or poster posted at the hand-wash sink in the women&#8217;s restroom to remind food employees to wash their hands. A sign was posted.Glen Oak Country Club, 250 Oakford Rd., Clarks Summit, June 1. Regular inspection; in compliance. Violations: Wooden knife scabbard observed in use in kitchen to hold knives. Scabbard does not allow for adequate cleaning of slots used to place knives into. Observed chipped paint on the table top mixer in the kitchen area. Observed a cutting board that is melted at the edges and easy to clean. The French fry cutter, a food contact surface, was observed to have food residue and was not clean to sight and touch. The cutter was placed at the ware -wash sink for cleaning. Rear door located in the kitchen area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. Paper towel dispenser empty at the hand -wash sink in the kitchen area. Violations: Raw shell eggs stored above cake in the Frigidaire refrigerator. The cake was placed on a shelf above the eggs. Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability. Fax a copy of the test results to the PA Dept. of Agriculture.Akita Asian Cuisine, Inc., 1061 Shoppes Blvd., Moosic, June 2. Regular inspection; out of compliance. Violations: Food facility unable to provide record the pH in pH log and pH calibration. Sanitarian provided a template for calibration and pH log. Squeeze bottle with liquid contents was not marked with the common name of the food. Observed in-use knives and cleavers stored between table edges, an area not easily cleanable &amp; sanitized. Observed deeply scored cutting boards not resurfaced or discarded as required. Clean dish racks observed stored on the floor in kitchen area. Observed cutting board stored in kitchen area directly on the floor, and not 6 inches above the floor. Food residue observed in the hand-wash sink, indicating uses other than hand washing. Food facility has an original certificate posted, but the location is not conspicuous for public viewing.Al&#8217;s Quick Stop/Subway #165, 10 Scranton Pocono Hwy, Covington Twp., June 2. Regular inspection; in compliance. Violations: Food employees observed in Subway sandwich prep area, not wearing proper hair restraints, such as nets, hats, or beard covers. Hats were donned. Raw shell eggs stored above dairy products in the retail case. The eggs were placed on the bottom shelf. Beef 46 degrees F and chicken 45 degrees F in the cold hold unit in Subway. The owner placed the beef and chicken in the refrigerator. Shall maintain cold food at 41 degrees F or below. The back door is left open and without a screen door. The door was closed. Approximately 6-12 rodent droppings observed on a box of lights under the storage rack in the back prep area and along the wall junction. The area was cleaned and, as per the owner, will be monitored for activity.Caboose Ice Cream &amp; Snacks, 100 Madisonville Rd., Madisonville Twp, June 2. Regular inspection; in compliance. Violation: Temperature measuring device for ensuring proper temperature of equipment is not available in the chest freezers in the shed.Freedom Bar &amp; Grill, 901 N. Valley Ave., Olyphant, June 3. Follow-up inspection; in compliance. Violation: Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Test were ordered but have not yet arrived.Main Line Hoagie, 1035 Main St., Dickson City, June 3. Regular inspection; out of compliance. Violations: The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food employee observed donning single use gloves without a prior hand wash. Employees instructed to wash hands prior to donning gloves during this inspection. A food employee was observed washing their hands at the ware -wash sink rather than the designated hand-wash sink. Employee instructed to use designated hand-wash sink during this inspection. Food employees observed in food prep areas, not wearing proper hair restraints, such as nets, hats. Facility made pasta, macaroni and potato salads were held at 52 degrees F, in the reach-in refrigerator unit in the middle prep area, rather than 41 degrees F or below as required. The foods were voluntarily discarded during this inspection after they were temped with a digital stem thermometer that was calibrated to 32 degrees F in front of employees during this inspection. Ambient air temperature of the reach-in refrigerator in the middle prep area was noted at 54 degrees F during this inspection. A refrigeration repairman was called during this inspection. Unit will not be used to hold any TCS foods until ambient air temperature can be maintained at 41 degrees F or less. The microwave oven, a food contact surface, was observed to have food residue and was not clean to sight and touch. Non-food contact surfaces (shelves and back of Victory bain marie in middle prep area) not cleaned at a frequency to preclude accumulation of dust. Non-food contact surfaces (table under grill in front prep area) not cleaned at a frequency to preclude accumulation of grease and old food debris. Floor underneath pizza ovens has an accumulation of sheet rock debris. Dust accumulation observed under tables in dough room. Floor underneath range in pizza area has an accumulation of grease. The food facility does not have the original certificate for the certified food employee posted in public view.
