The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. According the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Also, at the time of the inspection violations are recorded but are often corrected on site prior to the inspector leaving the establishment.&#8221; The information is taken from the inspection database at www.eatsafepa.com. Regular inspection; in compliance. Violation: Observed spillage on the bottom of the reach-in cooler.Bar Louie at Mohegan Sun, 1280 Rte. 315, Wilkes-Barre, May 23. Regular inspection; in compliance. Violations: Mechanical ware-washing equipment had a greasy buildup observed inside. Observed a buildup of food residue on metal shelves in multiple refrigeration units. Shelves were cleaned at time of inspection. Observed a buildup of pink residue on the upper drop area of the ice machine. Machine was emptied at time of inspection and will be cleaned and sanitized prior to use. Observed food residue on utensils stored as clean. Utensil were rewashed and sanitized. Observed a buildup of brown residue in the three-bay sink in the prep area. Observed a buildup of food residue on the exterior of multiple bulk ingredient storage bins. Observed a buildup of food residue on the handle on the freezer in the cooking area. Observed a buildup of old food residue on the post can opener table holder. Observed a buildup of residues on multiple metal storage shelves. Observed date marking sticker residue on clean food pans. Hand- wash sink in the kitchen area is detaching from the wall and is in need of repair. Observed a buildup of dirty water/debris along the walls in areas of the kitchen. Violations: Observed rusting metal carts and pitting metal shelves in the back area. Observed a buildup of black residue on the deflector plate in the ice machine. Person in charge cleaned plate at time of inspection. Observed a buildup of residue on the plastic shelf dividers and the bottom surface in the Pepsi cooler. Observed 5 small flies on the wall around the sinks in the sales area. Facility is working with their pest control provider to control the issue.China King, 2800 N. Memorial Hwy. Dallas, May 23. Regular inspection; in compliance. Violations: Observed a bucket of soy sauce stored directly on the floor in walk-in cooler, rather than 6 inches off of the floor as required. The bucket was elevated during this inspection. Facility is reusing soy sauce buckets intended for single use to store other food items such as chicken broth. Observed a buildup of grease on the hood filters above the cook line. There is not tracking for the ceiling tiles in the furnace room. Ceiling tiles are sagging and not fitted tightly allowing open area to the area above. Violations: Observed ice used as a coolant in the long bar end ice/beverage dispenser, being used as food. Observed buildup of old residue inside 2 Pepsi nozzles of soda guns in bar area. Nozzles were cleaned and sanitized at the time of this inspection. Observed black and pink mold-like substance on cuber head and interior sides of ice machine. Ice was disposed of and machine cleaned and sanitized at the time of this inspection.EZ Express Mart, 3251 Rte. 118, Dallas, May 24. Violations: Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Thermometers (built in digital) for ensuring proper food temperatures are not calibrated and/or functioning properly at the reach in grab-and-go refrigeration unit where sandwiches/hoagies are kept. A thermometer was placed inside of refrigeration unit. No sign or poster posted at the hand -wash sink in the ware- wash area to remind food employees to wash their hands. A sign was posted during this inspection. There are no paper towels at the hand wash sink in the ware-wash area. Paper towels were placed at sink during this inspection. Several ceiling tiles in the ware wash area are sagging and out of the tracking, exposing the area above, and in need of repair.Hops and Barleys, 131 Main St., Luzerne, May 24, Regular inspection; in compliance. Violations: Observed two in-use knives stored between the end of the bain marie, an area not easily cleanable &amp; sanitized. The knives were removed, cleaned and sanitized during this inspection. Observed containerized food stored directly on the floor in both the walk-in cooler and the walk-in freezer, rather than 6 inches off of the floor as required. Loose rubber door gaskets observed on the door of the walk-in freezer. There is frozen condensate on the ceiling, as well as ice buildup on sealed/boxed foods in the walk-in freezer. The post can opener blade, a food contact surface, was observed to have dried food residue and was not clean to sight and touch. The post can opener blade was cleaned and sanitized during this inspection. Observed a buildup static dust on the fan guards of the 3- door TRUE reach-in beer cooler in the bar area. Observed a buildup of old syrup residue on the surface above and behind the nozzles on the beverage machine. Food employee observed storing clean food equipment while wet, and not allowing time for draining and/or air-drying. Old food residue observed in the hand-wash sink, indicating uses other than hand washing. Observed a buildup of residues on the floor under equipment in areas of the facility.<style>
