Amish Cook: Getting ready to host and feed the church community for a month

<p>HANOVER TWP. &#8212; They&#8217;ve had their break &#8212; if you can call cooking for a huge summer bazaar a break &#8212; and this week the Soup for the Souls volunteers at Exaltation of the Holy Cross Church have resumed their annual fall/winter fundraiser, which features a different type of soup just about every month.</p><p>First up &#8212; and set to be sold from 10 a.m. to 6 p.m. on Thursday at the church &#8212; is a big batch of vegetable beef.</p><p>&#8220;It&#8217;s one of our most popular soups,&#8221; Mickey Maday, of Edwardsville, said early Monday morning as a quintet of celery choppers estimated they would cut 20 pounds of the fragrant green stalks before they were done.</p><p>&#8220;We want to have it all ready&#8221; by evening, said Pat Baran, of Hanover Township, explaining that&#8217;s when volunteer chef Barry Kaminski would be finished with his day job and come to the church basement to craft a savory broth with the celery plus 20 pounds of carrots, 30 pounds of potatoes and 40 pounds of meat.</p><p>&#8220;He gets butcher-prepared meat,&#8221; Maday said. &#8220;It&#8217;s not just any kind of beef.&#8221;</p><p>Because the soup starts simmering on a Monday night and isn&#8217;t sold until Thursday, Maday said, the flavors get a chance to permeate.</p><p>&#8220;It&#8217;s all take-out, and we provide the containers,&#8221; volunteer Theresa Roebuck, of Wilkes-Barre said, adding the soup is chilled when people pick it up (for $8 a quart) and take it home to reheat it.</p><p>&#8220;That&#8217;s what I&#8217;ll be having,&#8221; she said with a smile.</p><p>The Soup for the Souls project is so named because it raises funds for cemetery maintenance, Maday said.</p><p>Though the soup volunteers have just returned to the church kitchen, this will be the last chance to sample their home-style soup for a few months, because the parish will be busy celebrating its 100th anniversary this fall.</p><p>Festivities include an anniversary Mass, to be celebrated by Bishop Joseph Bambera at 11 a.m. Oct. 8 at the church and followed by a 1:30 p.m. reception at the Woodlands Inn in Plains Township.</p><p>The church will also host a Polka Mass at 4 p.m. Sept. 9.</p><p>Polka music fits right in with the heritage of the church founders, Roebuck said, and may be why one of the dishes in the Soup for the Souls repertory is Polish Wedding Soup.</p><p>&#8220;It&#8217;s really like Italian Wedding Soup,&#8221; she admitted. &#8220;We just call it Polish.&#8221;</p><p>Other perennial Soup for the Souls favorites are Manhattan clam chowder and piggie soup, the former featuring clams in a tomato-based broth and the latter having all the ingredients you&#8217;d expect to find in stuffed cabbage, aka pigs in the blanket or piggies.</p><p>&#8220;It&#8217;s loaded with cabbage, loaded with rice, loaded with meat,&#8221; Maday said. &#8220;It&#8217;s very thick, a meal in itself.&#8221;</p><p>Maday grew up attending Exaltation of the Holy Cross Church, located in the Buttonwood section of the township, and has fond memories of a bustling place.</p><p>&#8220;Most people didn&#8217;t have cars, and families would walk to church. You&#8217;d see them coming from all over on a Sunday morning. In the summer, we&#8217;d walk across a field (from the Korn Krest section) and in the winter we&#8217;d walk along the road,&#8221; he said. &#8220;Then, during Lent, at 4 p.m. on a Friday, you&#8217;d see all these kids walking to the church from Hanover Green Elementary School. It seemed like everybody would go, to be with their buddies, no matter what their denomination.&#8221;</p><style>
