The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. According the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Violations: The ice deflector plate inside of the ice machine, a food contact surface, was observed to have a black mold like residue and was not clean to sight and touch. Violations: Commercially processed refrigerated, ready to eat, time/temperature control for safety food, deli meats and cheeses, located in the deli case, and held more than 24 hours, is not being marked with the date it was opened. In an interview with staff it was determined that a new label is being printed each time that the already opened deli meats and cheeses are sliced re-wrapped, therefore the date is changing daily and there is no way of knowing when the product was initially opened. Paper towel was placed at the time of this inspection.Dagwood&#8217;s Deli &amp; Subs, 418 Market St., Kingston: Regular inspection, in compliance.Good Shepherd Academy, 316 N. Maple Ave., Kingston: Regular inspection, in compliance. Violations: Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was less than 10 ppm, and not 50-100 ppm as required. The facility has agreed to take the dish machine out of service until either Eco lab services the machine and the residual sanitizer is 50- 100 ppm, or a new machine is installed. The facility is taking bids on installing a new machine. They recently had eco lab in and install a chemical sanitizer system on the machine as the high temp system has failed. The facility has agreed to hand wash all equipment, dishes and utensils in the three-bay sink. Chicken patties and beef steak wafer patties were held at 61 &#176;F, in the bain marie , rather than 41&#176;F or below as required. Small winged insects too numerous to count are observed in donut display case, on donuts in display case, case frame work and wall surfaces by display case.
