Quinoa-stuffed tomatoes a tasty dish for vegetarians and meat-eaters alike

<p>WILKES-BARRE &#8212; Josh Jooris was on a plane with his Carolina Hurricane teammates bound for Boston when he got the call on Monday.</p><p>Jooris found out he was traded to the Pittsburgh organization in exchange for Greg McKegg, who had been skating with the Wilkes-Barre/Scranton Penguins.</p><p>So rather than suit up for his 205th career NHL game and face the Bruins, Jooris drove to Wilkes-Barre to join his new AHL teammates.</p><p>The trade was unexpected, but the uncertainty surrounding the NHL trade deadline is something Jooris has become accustomed to during his five-year pro career.</p><p>&#8220;I&#8217;ve been through a couple trade deadlines, and every year not a clue it&#8217;s actually going to happen,&#8221; Jooris said on Tuesday after his first practice with Wilkes-Barre/Scranton. &#8220;It was a whirlwind of a day.&#8221;</p><p>Jooris will have to wait a bit longer before he can put down roots in Wilkes-Barre.</p><p>The Penguins leave on Wednesday for Michigan to kick off a three-game weekend, which will start against the Grand Rapids Griffins. They&#8217;ll travel to Illinois on Saturday to play the Rockford IceHogs and wind up the weekend in Milwaukee to face the Milwaukee Admirals.</p><p>While the trip will delay Jooris&#8217; chance to become acquainted with Wilkes-Barre, it will give him plenty of time to get to know his new team.</p><p>&#8220;A three-in-three will help, just being on the road with the guys,&#8221; Jooris said. &#8220;I haven&#8217;t done a three-in-three in a while.&#8221;</p><p>Jooris, 27, has spent the bulk of the last four seasons in the NHL, appearing with the Calgary Flames, New York Rangers, Arizona Coyotes and Carolina. He amassed 23 goals and 55 points in that time, playing both center and wing.</p><p>Wilkes-Barre/Scranton head coach Clark Donatelli said he will play Jooris at center this weekend.</p><p>&#8220;We&#8217;re really happy to get him. He&#8217;s coming right out of the NHL and he&#8217;s going to help us,&#8221; Donatelli said.</p><p>Jooris said he plays a fast, energetic style and likes to get in on the forecheck while be responsible in the defensive zone. While he hopes to work his way back up to the NHL, he said he&#8217;s excited to help the Pittsburgh organization at any level.</p><p>&#8220;Whatever they need me to do, I&#8217;m excited to be a part of it,&#8221; Jooris said, adding he&#8217;s looking forward to the chance to play playoff hockey again.</p><p>&#8220;I haven&#8217;t played playoff hockey since my first year. It should be exciting. This is an unbelievable organization and I&#8217;m honored to be here.&#8221;</p><p><strong>Notes</strong></p><p>With Pittsburgh goaltender Matt Murray sidelined with a concussion, Casey DeSmith joined Tristan Jarry in Pittsburgh. Donatelli said Anthony Peters will play at least two games this weekend, while injured netminder Michael Leighton is nearing a return and will travel with the team. Donatelli said another goaltender will be brought in as insurance if Leighton is unable to play this weekend.</p><p>Among other injured players, the only one who may return this weekend is defenseman Chris Summers.</p><p>Monday&#8217;s trade deadline expired with Daniel Sprong not being moved. Donatelli said he&#8217;s happy to have the talented winger remain with the club.</p><p>&#8220;Sprong is an elite prospect and he&#8217;s a big part of the organization,&#8221; Donatelli said. &#8220;He&#8217;s doing a great job in his development and he&#8217;s a pleasure to coach. We&#8217;re very happy we kept him.&#8221;</p><style>
