The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. According to the agency: &#8220;Any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Also, at the time of the inspection, violations are recorded but are often corrected on site prior to the inspector leaving the establishment.&#8221;The information is taken from the inspection database at www.eatsafepa.com. Mops are not being hung to air dry. Mops are in a holder but the wet mop heads are sitting against each other in a basin under the rack. Violations: Observed coating peeling on shelves in the walk-in cooler. Observed a build up of food residue along the edge of the bain-marie. Observed a buildup of black residue on the interior of the ice machine. Machine was cleaned. Observed 20 old rodent droppings behind equipment in the kitchen area. PIC cleaned area at time of inspection. Observed in-use knife stored between edges or between tables, an area not easily cleanable and sanitized. Cheese, a refrigerated, ready-to-eat time/temperature control for safety food in the refrigerator, was date-marked by the facility, but was beyond the 7-day use or sell-by date and requires discarding. Wyoming St., Wilkes-Barre: Regular inspection, out of compliance. Violations: Person in charge is not monitoring closely enough the food risk factors observed at time of inspection. Deli meat, bacon, cheese was held at 48-50&#176;F in the deli case, rather than 41&#176;F or below as required. Loose rubber door gaskets observed on the walk-in cooler doors. Food employees using manual warewashing sink as a handwashing sink. Walk-in freezer floor observed with old food spillage. Heavy ice buildup on food product in walk-in freezer. Bottle of Windex and rubbing alcohol observed sitting on top of meat case. Observed frozen food stored directly on the floor in walk-in freezer, rather than 6 inches off the floor as required. Commercially processed refrigerated, ready-to-eat, time/temperature control for safety food (deli meats), located in the deli case and held more than 24 hours, is not being marked with the date it was opened. Deli case is not maintaining food at &lt;41&#176;F, thermometer observed reading of 50&#176;F. Observed deeply scored cutting boards not resurfaced or discarded as required. Produce walk-in cooler refrigeration unit fan guards have dust buildup. Violations: Observed a buildup of old food residues along the back edge, around the hinges and on the interior area below the food pans in the bain-marie. Observed old food residue on the non-food contact surfaces on the deli slicer. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed raw eggs stored on top of vegetables in the reach-in cooler in the kitchen area. Eggs were moved. Observed a buildup of mold-like residue on the deflector plate in the ice machine. Observed a buildup of old food residue on the interior of the microwaves in the kitchen area. The food facility does not have the original certificate for the certified food employee posted in public view. Observed three live, flying insects and five dead insects in the soda gun holster at the bar. Holster was cleaned. Observed small insects in two bottles of liquor at the bar area. Bottles were discarded. Observed rust forming on shelves in the reach-in cooler in the kitchen area.D&#8217;Amato&#8217;s Wood-Fired Pizza, 802 W. 15th St., Hazleton: Regular inspection, in compliance. Violations: Non-food contact surfaces beneath the bain-marie sandwich cutting board not cleaned at a frequency to preclude accumulation of food spillage. The food facility does not have the original certificate for the certified food employee posted in public view.Dollar General, 224 Hazle Township Blvd., Hazleton: Opening inspection, in compliance.Gertrude Hawk Chocolates, 125 Laurel Mall, Hazle Township: Regular inspection, in compliance.Ice House Pub, 2658 Nuangola Rd., Mountain Top: Regular inspection, in compliance. Violations: The water temperature of the wash compartment of the manual warewashing equipment was 91&#176;F, rather than not less than 110&#176;F, as required. The facility had the heating element replaced in the water heater during this inspection. The facility has agreed not to use the three bay sink for warewashing until the water is heated back up to 110&#176;F. Until that time, they will use the dish machine for all warewashing. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was &lt;10 ppm and not 50-100 ppm as required. The tube was repositioned in the sanitizer solution and now the residual sanitizer tests at 50 ppm. The handwash sink located in the prep area does not have water at a temperature of at least 100&#176;F. The facility had the element in the water heater replaced during this inspection. The facility is heating water in an electric coffee urn for hand washing until the water heater heats the water to the acceptable temperature, at which time they can return to using the hand wash sink.Mary&#8217;s Family Restaurant, 540 N. Hunter Highway, Route 309, Drums: Regular inspection, in compliance. Violations: Observed containerized eggs stored directly on the floor in walk-in cooler, rather than 6 inches off the floor as required. The eggs were elevated during this inspection. The post can opener blade, a food contact surface, was observed to have dried black food residue and was not clean to sight and touch. The can opener was cleaned and sanitized during this inspection.New York Fried Chicken, 2 E. Diamond Ave., Hazleton; Regular inspection, in compliance. Violations: Ice cream dipper well for dipping utensils did not have sufficient velocity of water to flush particulates to the drain. Corrected on site. Lights are not shielded or shatter proof over the food prep area. Observed raw chicken being stored in non-food grade plastic 5-gallon pails labeled rapid coating construction material, which is not an acceptable practice. Corrected on site. No sign or poster posted at the handwash sink in the food prep/kitchen area to remind food employees to wash their hands. Supplied signage for immediate corrective action.The Doghouse Saloon, 202 S. The facility had in the plan that they were going to have a three bay sink, however at the last minute purchased a non-NSF approved countertop dish machine. The owner is now going to install a two bay sink and use a detergent/sanitizer combination for warewashing. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.
