The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. According to the agency: &#8220;Any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the over all, long-term cleanliness of an establishment. Also, at the time of the inspection, violations are recorded but are often corrected on site prior to the inspector leaving the establishment.&#8221;The information is taken from the inspection database at www.eatsafepa.com. Violations: Observed 200 old rodent-like droppings under equipment and shelves in the kitchen and storage area. Observed a build up of debris and residues under equipment in the kitchen area. Observed a build up of food residue in along the edges and around the gaskets on the bain-marie. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. Discussed date marking and provided guidance documents. Observed single-service, single-use articles stored in storage area directly on the floor and not 6 inches above the floor.Isle of Coffee, 1023 Wyoming Ave., Midway Shopping Center Unit 13, Wyoming: Opening inspection, in compliance. Violations: In the back kitchen area, there is a ceiling tile that is not seated in the tracking properly and one tile that there is corner cut out (approx. 4x4) inches, exposing the area above. Raw eggs stored above bottled/canned beverages from which consumers would drink inside of the walk-in cooler. The eggs were moved to the lower shelf during this inspection. There are several areas in the walls above the walk-in freezer and walk-in cooler that have large opens, exposing the area above the ceiling. Observed a build up of dust on snack items in the sales area.Tenth Street Elementary School, 10th Street, Wyoming: Regular inspection, in compliance. Violations: Observed live and dead ants under shelving in the dry storage area. Mechanical warewashing equipment had a slimy buildup observed inside. Observed rust forming on shelves in the reach-in cooler in the kitchen. Observed a build up of residue on the underside of the shelves in the walk-in cooler.Gramma Aita&#8217;s Kitchen, 1081 Wyoming Ave., Exeter: Regular inspection, in compliance.Heffron&#8217;s Mini Mart, 221 Union St., Luzerne: Regular inspection, in compliance. Violations: Food facility is not using an approved detergent/sanitizer combination in both compartments of the two compartment manual ware washing equipment. Facility was using Steri-mine, Pro-Power Pro San Sanitizer-disinfectant in one of the two bays of the sink to sanitize utensils and equipment. The facility cleaned and sanitized a basin to use as a third bay until the proper detergent/sanitizer combination is obtained. Equipment (deli slicer parts) observed in the hand wash sink indicating uses other than handwashing. Violations: Food employee is not using available sanitizer test strips or test kit to determine sanitizer concentration. The french fry cutter blade, a food contact surface, was observed to have dried food residue and was not clean to sight and touch. The blade was removed, washed and sanitized during this inspection. Mops are not being hung to air dry. Observed a wet mop stored inside of an empty mop bucket. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (cheese), located in the reach in refrigeration unit and held more than 24 hours, is not being marked with the date it was opened. The cheese was date marked during this inspection. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. The ceiling surface of the walk-in cooler in front of the fans has an accumulation of static dust and is in need of cleaning.Jack Frost Ski Area, 434 Jack Frost Mountain Rd., White Haven: Complaint inspection, in compliance. Violations: The hand wash sink located in the various food prep areas does not have water at a temperature of at least 100&#176;F. The water temperature of the wash compartment of the manual warewashing equipment was 95&#176;F, rather than not less than 110&#176;F, as required at various ware wash sinks. Violations: The Quaternary ammonia concentration in the sanitizing solution of the 3-bay ware wash sink was 0 ppm. PIC refilled sink with appropriate sanitizer concentration. Discussed sink set up and testing for sanitizer concentration. Observed a build up of residue behind the nozzles and ice chute handle on the self-serve beverage machine. Observed cases of food stored directly on the floor in walk-in freezer and cooler areas, rather than six inches off of the floor as required. Cases were moved during inspection.Towers Bar &amp; Restaurant, 1478 Tomhicken Rd., Fern Glen: Regular inspection, in compliance. Violations: Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. The post can opener blade, a food contact surface, was observed to have a black food residue and was not clean to sight and touch. The post can opener blade was placed into the sink to be washed and sanitized during this inspection. Eggs, steaks and hamburgers are served raw or under cooked to the customer&#8217;s request; however, a written consumer advisory (on the menu, table tent, or placard) is not provided to the consumer. The facility added the consumer advisory to the menus during this inspection. The fan guard inside of the reach-in refrigeration unit located in the wait staff area has a build up of black grime and in need of cleaning.Wyoming Valley Sports Dome, 131 Bear Creek Blvd., Wilkes-Barre: Regular inspection, in compliance.
