From new world wines to old, everyone has their favorite.
				Developing a palate for what can be your favorite takes time. It also takes a lot of tasting!
				There are so many grape varietals, from so many regions, and so many different ways to produce this godsend in a glass. Pairing them with your dinner can be fun, and the more knowledgeable you are on the different types of grapes and their flavors the better you can decide on what to order when your staring down that confusing wine list.
				From an educational standpoint, understanding what your ordering isn&rsquo;t as important as you think.
				Do you recognize that there is a Cabernet Sauvignon on the menu? Do you recognize the purveyor on the label? Don&rsquo;t be afraid to ask your server for help. If they don&rsquo;t know, they&rsquo;ll ask for help.
				It&rsquo;s easy for us as your staff to ask for more help or even give you a sample of the wine to make sure that you enjoy it, and that you&rsquo;re not wasting your money on something you&rsquo;re ultimately not going to like.
				A simple understanding that you know you like Cabernet Sauvignon from one bottle or region doesn&rsquo;t necessarily mean you will like a certain glass from a different region of the world, or even a different region in the same state or country. There are so many variables that help develop grapes from certain regions and the better you know them will make for an easier decision at the dinner table. Again, it&rsquo;s easier to ask for help than try to swallow a glass of wine that you don&rsquo;t prefer.
				People that craft your wine list do so in a way that when you&rsquo;re looking at it you will see a broadness in taste. Dry, sweet, medium bodied, full bodied, sparkling and everything in between should be represented in any decent list. You don&rsquo;t have to be a sommelier to be able to put together a decent list for people. Basic understanding of varietals and a general knowledge of flavor profiles can be a good starting point for anyone trying to put together a list for a restaurant or even someone hosting a party for friends.

				Briefly, I&rsquo;ll try to navigate you through what to look for when ordering the perfect glass.
				California&rsquo;s Cabernets often play host to more of a fruit forward, jammy-type presence on the palate where as old world cab&rsquo;s such as French are often earthy and dry.
				Pinot Noir from Oregon more often than not has a background of cherry notes. If you&rsquo;re in the mood for a glass of white, the chardonnay you order may be oaky, buttery and dry.
				Sauvignon Blanc from New Zealand taste completely different that the ones from California and France. New Zealand Sauvignon Blancs are specifically known for their tropical fruit as well as citrus notes.
				Reislings can be dry, medium sweet, and sweet. When you see a Reisling on a wine list, check with your server and always ask the sweetness of the wine. You don&rsquo;t want to get railroaded by a dry Reisling when you&rsquo;re not expecting it.
				This is a very important tip in knowing how to order because the flavors are so different. Basics aside, always remember that trying different varietals can be fun and interesting if you just keep an open mind.
				The wines of the world are all meant to be explored. You never know from where you&rsquo;re going to find your favorite glass of wine. All we can do is keep on trying wine to find that certain love affair in a glass.
				Every year&rsquo;s yield tells a different story, and gives a different taste. It&rsquo;s a never-ending cycle toward finding the perfect bottle to meet our liking.
				And if you put a bottle of wine in front of your friends, good or bad, recognized or not, you know they&rsquo;ll drink it anyway!
