Sibio's southern Italian fare served up with elegance, tradition &nbsp;&nbsp;&nbsp; 
 Sibio's has been a legend in the Scranton area for years, but somehow I'd
never been there. The large white building that houses the restaurant seemed
to have a festive air that continued as we were greeted warmly and escorted to
our table in one of the two dining roomsAlthough the rooms are rather large,
the tables are nicely spaced and set with white linen, so a feeling of warmth
and grace is maintained. The menu, of manageable size, specializes in southern
Italian food with a few elegant touches. &nbsp;&nbsp;&nbsp; The standout appetizers were the eggplant stuffed with ricotta cheese and
the clams casino. The very thin slice of lightly sauteed eggplant was rolled
around a mild, creamy ricotta and sauced with a dab of marinara. The sweet
clams in the clams casino were baked with a topping of bacon, sweet peppers,
onion, just a touch of bread crumbs and herbs. &nbsp;&nbsp;&nbsp; 
 Several members of our group ordered veal T-bones, which were thick, tender
and cooked exactly as ordered. My dining companion opted for the Chicken
Scaparelli, which I recognized as chicken scarpaiello. The small pieces of
tender chicken, left on the bone, were simmered with rosemary, balsamic
vinegar and sausage that gained extra richness and flavor from the chicken
bones. &nbsp;&nbsp;&nbsp; 
 Two of the other entrees I can vouch for are veal marsala- the veal slices
were fork-tender and the sauce was a classic preparation of reduced pan juices
and marsala wine- and a tender sliced steak, broiled to the exact degree of
doneness ordered. &nbsp;&nbsp;&nbsp; 
 All entrees were served with potato and vegetable or a side dish of
spaghetti. &nbsp;&nbsp;&nbsp; 
 The spaghetti was cooked just to the al dente stage, and the sauce, whether
red or alio e olio (garlic and oil), was just right for a side dish. It added
flavor without overwhelming. &nbsp;&nbsp;&nbsp; 
 Another pasta, angel hair carbonara, brought al dente angel hair sauced
with ham, bacon and sweet peppers that had been sauteed with roasted garlic,
olives and butter. The half portion is more than ample as an appetizer. &nbsp;&nbsp;&nbsp; 
 Chicken Franchese with spinach was another classic preparation of large,
tender boneless chicken breasts that had been dipped in egg batter and bread
crumbs before being sauteed with lemon, garlic, olive oil and white wine. The
delicious twist at Sibio's is that the chicken is served over a bed of
spinach. &nbsp;&nbsp;&nbsp; 
 A special of scallops was made with large, sweet succulent sea scallops
that had been sauteed in tomatoes, mushrooms, butter and wine for a slightly
unusual and very special entree. &nbsp;&nbsp;&nbsp; 
 Desserts are made in-house and they all look heavenly. We chose a warm
apple crumb pie a la mode, and it came with a rum raisin ice cream that was
the perfect accompaniment. &nbsp;&nbsp;&nbsp; 
 Another time we had the fruit tart. Fresh fruit graced a thin layer of
custard that filled a rich crust. &nbsp;&nbsp;&nbsp; 
 Al Sibio and his wife, Bernadine, have been operating this restaurant for
24 years. They're joined now by their three sons who have preserved the
parents' traditions while adding tasty touches of their own. &nbsp;&nbsp;&nbsp;
