An appetite for bluegills &nbsp;&nbsp;&nbsp; 
 After 28 years of working as a professional in the fly-fishing world, Poul &nbsp;&nbsp;&nbsp; Jorgensen has developed two strong predilectionsThe 71-year-old Jorgensen,
from Roscoe, N.Y., doesn't particularly care to tediously tie a salmon fly
called the Jock Scott. &nbsp;&nbsp;&nbsp; 
 And he does have a fondness for fishing for ... bluegills. &nbsp;&nbsp;&nbsp; 
 "The Jock Scott salmon fly is most difficult because it has about 28
different pieces of material and requires 23 tying steps," Jorgensen said.
"It's a very difficult fly to tie. When people want to buy one, I have a
tendency to say that I don't want to do it." &nbsp;&nbsp;&nbsp; 
 Jorgensen ties only for collectors. You would not approach him for two
dozen flies to fish the home stream, for instance, because he charges $250 for
each fly. &nbsp;&nbsp;&nbsp; 
 All this makes a Jorgensen Jock Scott a rare commodity. &nbsp;&nbsp;&nbsp; 
 "I tied one for a fund-raising auction for the Catskill Fly-Fishing Center
(in Livingston Manor) and it sold for $800," Jorgensen said with a smile. &nbsp;&nbsp;&nbsp; 
 That same smile again crosses his face when he considers which fish he most
prefers to tackle. &nbsp;&nbsp;&nbsp; 
 "I have fished all over the world and my fishing is diversified. I've
fished for bonefish off Christmas Island, for tarpon off Costa Rica, for
Atlantic salmon in Norway. Most people would think that I would prefer to fish
for Atlantic salmon the most," Jorgensen said. &nbsp;&nbsp;&nbsp; 
 And those people would be wrong. Despite his consummate skill at tying
salmon flies, Jorgensen said he favors a much more humble species. &nbsp;&nbsp;&nbsp; 
 "My favorite fish is the bluegill. Give me a bluegill pond, a light fly rod
and some popping bugs, and you can have all the salmon fishing you want. &nbsp;&nbsp;&nbsp; 
 "It's the most enjoyable thing," he said. &nbsp;&nbsp;&nbsp; 
 Jorgensen's choice perhaps has something to do with the fact the bluegills
can be found almost everywhere and are usually cooperat
