Violations: Corn meal food ingredient storage container, in the prep area, is not labeled with the common name of the food. The container was labeled during this inspection. Observed scoop stored with handle below the corn meal in container located in the prep area. This was corrected during this inspection. Soap was not available at the hand-wash sink in the prep area. This was corrected and soap was placed during this inspection. Three ceiling tiles above the pizza oven are not in the channels and expose the area above the ceiling. Corrected during inspection.Goin&#8217; Donuts, Unit E, 908 Wyoming Avenue, Wyoming, Sept. 9. Regular inspection; in compliance. Violations: Observed donuts coated with peanuts and coconut, both allergens, stored directly above other ready to eat donuts in the display case. This was corrected during this inspection and the peanut and coconut coated donuts were moved to the bottom shelf of the display case. The water temperature of the wash compartment of the manual ware-washing equipment was 96&#176;F, rather than not less than 110&#176;F, as required. This was corrected during this inspection. The water temperature setting was turned up and water temperature is holding at 116 degrees Fahrenheit. The hand-wash sink located in the prep area does not have water at a temperature of at least 100&#176; F. It was measured at 96 degrees Fahrenheit. This was corrected during this inspection. The water heater setting was turned up and water in holding at 116 degrees Fahrenheit. 4Sirak&#8217;s Smokehouse, Luzerne County Fair, Rt. 118 Dallas, Sept 10. Opening inspection; in compliance.Just Fred&#8217;s Catering, 241 William Street, Pittston, Sept. 11. Regular inspection; in compliance. Violations: Food facility has an employee that has taken food safety training program; however, the food safety program was not an ANSI/CFP accredited Certified Food Manager program. Blade of post can opener, a food contact surface, was observed to have food residue and was not clean to sight and touch. Person in charge cleaned at time of inspection. Observed a build up of black mold like residue on interior of ice machine. PIC cleaned at time of inspection. Clean dish racks observed stored on the floor in kitchen area. Violations: Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was o ppm, and not 50-100 ppm as required. Owner stated that he thinks the sanitizer solution may be too old. He stated that he has ordered more sanitizer which should be delivered at which time he will change out the sanitizer solution and test residual chlorine again to ensure with in 50 - 100 ppm. Until they are certain that they are in compliance they will sanitize dishes etc. in the 3-compartment sink. Observed a build up of pink mold like residue on non-food contact surface of ice chute in self serve beverage area. PIC cleaned at time of inspection. Ware-wash sink has a hose attachment that is hanging below the flood rim of the sink and not an appropriate air gap. Person in charge has ordered light shields and will install prior to beginning food prep. Violations: Food facility has an original certificate posted, but the location is not conspicuous for public viewing. Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats. Observed wet wiping cloths in kitchen area, not being stored in sanitizer solution. Employee&#8217;s uni-sex rest room is not provided with a covered waste receptacle for sanitary napkins. A white powder substance was observed on floor in front of electric panel box and also in the crack between panel box and wall. Rear receiving door located in the back of kitchen area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. No sign or poster posted at the hand-wash sink in the employee rest room area to remind food employees to wash their hands. Food facility is not removing dead or trapped pests from control devices frequently, as evidenced by observed old / decaying mouse in pest control device in the bread storage area.
