The following are recent Lackawanna County restaurant inspection reports from the Pennsylvania Department of Agriculture. According to the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Violation: The interior surface of the microwave oven (customer service), a food contact surface, was observed to have food residue and was not clean to sight and touch. Regular inspection; in compliance. Violations: Employee toilet room does not have a self-closing door. Wall surface area behind/above the pizza oven in the food facility is dusty and in need of cleaning.Great Wall, 42 N. Main St., Carbondale, Sept. 17. Regular inspection; in compliance. Violations: Cooked brown rice, was not cooled from 135&#176;F to 70&#176;F in two hours and/or from 135&#176;F to 41&#176;F within six hours, after preparation. Cooked brown rice 86&#176;F product center observed to be left over night in the cooking equipment. Person in charge stated he forgot the product was left in the cooker; product was voluntarily discarded and denatured due to time/temperature abuse. Plastic containers were observed being used in daily food prep activities, which are scored, cracked, repaired with wire and not durable under this usage condition. Plastic utensils used for cooking are deformed and misshapen from heat and are not durable under normal use in the food facility. Observed air conditioner condensation waste water dispensed in the vegetable sink. The waste line was removed and the sink was cleaned and sanitized for compliance. Condensation water from the food facility air conditioning unit is not being disposed of properly. The owner installed a drain line into the vegetable prep sink. Violations: The food facility does not have the original certificate for the certified food employee posted in public view. Hood filters have an accumulation of grease. Non-food contact surfaces (fan guards and back wall of bain marie #1) were not cleaned at a frequency to preclude accumulation of dust and old food debris. Non-food contact surfaces (sides of fryer/grill) were not cleaned at a frequency to preclude accumulation of grease. Ceiling in ware-wash area observed with buckled paint.Jessup Pizza, 1019 Constitution Ave., Jessup, Sept. 17. Regular inspection; out of compliance. Violations: The food facility does not maintain Food Employee Certification records as required. An open employee&#8217;s beverage container was observed in a food preparation area. Food employees were observed in prep area not wearing proper hair restraints, such as nets or hats. Containers of food were observed being stored directly on the floor in walk-in cooler area, rather than 6 inches off of the floor as required. Food employee is not using available sanitizer test strips or test kit to determine sanitizer concentration. Can opener had old dried food residue on the blade, pizza prep refrigerator was observed with an accumulation of old food residue and debris on non-food contact surfaces. Fan guards in refrigerator have buildup of static dust. Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use. Reviewed proper cleaning procedure with person in charge. Outdoor storage area for waste is located outside of facility and is creating a potential insect or rodent hazard for the food facility.Kay&#8217;s Pizza, 333 Main Street, Childs, Sept. 17. Violations: Food containers were observed without handles and in direct contact with bulk food ingredients. Wiping cloths were observed in extremely unclean condition in prep area. Single-use plastic bags were being re-used multiple times. The cutter was cleaned during this inspection.
