The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. According to the agency: &#8220;any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Also, at the time of the inspection, violations are recorded but are often corrected on site prior to the inspector leaving the establishment.&#8221; The information is taken from the inspection database at www.eatsafepa.com. Regular inspection; in compliance.General Store, 154 State Route 239, Shickshinny, Sept. 21. Regular inspection; in compliance. Violations: Commercially processed, refrigerated, ready-to-eat, time/temperature control for safety foods (deli meats and cheeses) located in the deli case, and held more than 24 hours, is not being marked with the date it was opened or seven-day discard date. This was corrected during this inspection and discard dates were applied. Food facility has an employee who held a Certified Food Manager certificate; however, the posted certificate has expired and is no longer valid. The facility will register and pay to have someone take the 5-year food employee certification course within the next 10 days. The facility will fax/send proof of registration and payment to the the Region 3 office or email the proof to this inspector with in 10 days. The employee will complete the course with in 90 days and the facility will send to the office or fax or send/fax a copy of the certificate to the Regional office or email to this inspector once received. The food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. The water temperature of the wash compartment of the manual ware-washing equipment was 108 degrees F, rather than not less than 110 degrees F, as required. This was corrected during this inspection. The water heater was adjusted and water temperature is now 140 degrees F. A build-up of static dust was observed on the fan guards in both of two-door Pepsi and Coke beverage coolers. Floor tiles were missing around base of toilet in employee restroom. The facility will replace tile within 90 days.JK Holly, Inc. 48 S. Main St., Pittston, Sept 21. Violations: Person(s) in charge are not monitoring establishment operation for compliance with food code requirements as evidenced by the violations noted in this inspection report. Employee observed entering food prep area, donning food service gloves, no hand wash prior to donning gloves. Open, partially consumed coffee is stored on in-use food-prep table by slicer. No hair restraints worn by employees engaged in food prep. Tongs at self-serve snack display are not tethered. Food containers are stored on floor in walk-in cooler and walk-in freezer. Employee in deli states pizzas are held by time in lieu of temperature. Items are not time stamped and no log sheets are being kept to verify time in lieu of temperature. Three-compartment sink has build-up of grime/mineral deposits in basins. Interior surfaces of hood system over fryer and grill have buildup of grease/static dust. Top surfaces of conveyor oven have buildup of static dust. Florescent light tube in deli display case is not shielded. Fan guards in walk-in coolers have buildup of static dust/mold. Violations: Observed containerized food stored directly on the floor in the walk-in cooler, rather than 6 inches off of the floor as required. The inside surface of the beverage gun holster, a food contact surface is not smooth, easily cleanable and/or resistant to pitting, cracking or scratching. The person in charge stated he would order a new replacement holster. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration in three-compartment sinks in kitchen or bar. Observed a buildup of pink slime inside the beverage gun dispenser nozzle and a buildup of a brown substance on the inside surface of the beverage gun holster. The nozzle and holster were cleaned and sanitized during this inspection. Observed a buildup of static dust on the fan guards of both beer refrigerators in the bar area. Observed a common bowl stored in the bag of flour instead of a handled scoop. The bowl was removed during this inspection. Floor area around floor mixer has buildup of spilled flour.Shickshinny Beertown, Five Mountain Mall, U.S. Route 11, Shickhinny, Sept 22. Regular inspection; in compliance.Super Kings Buffet, 2298 Wilkes-Barre Township Market Place, Wilkes-Barre, Sept. 22. Complaint inspection; in compliance. Violations: Observed cans of insecticide labeled for household use in the waitress area and not labeled by the manufacturer as approved for use in a food facility. Person in charge removed insecticides from facility. Observed a buildup of pink mold-like residue on ice chute on Pepsi beverage machine. PIC cleaned at time of inspection. Observed a buildup of mold in drains on ice machine. Observed two fruit flies around drain in waitress area.Turkey Hill #179, 1 Brookhill Road, Sugarloaf, Sept 22. Regular inspection; out of compliance. Violations: Previously frozen, thawed, time/temperature controlled for safety cheeseburgers offered for sale in retail cooler are not date-marked. Person(s) in charge are not monitoring establishment operation for compliance with food code requirements. No proof that certified food handler is employed in this facility. Two pints and two quarts of 2-percent milk offered for sale are showing expired sell-by dates. Items removed from sale. Tongs at self-serve roller grill are not tethered. No accurate records for time in lieu of temperatures controls for time/temperature controlled for safety roller grill foods are being maintained. Log book indicates temperature check approximately 20 minutes ago was 176 degrees F, current temperature is 117 degrees F product center. Items were voluntarily disposed of due to potential time/temperature abuse. Three-compartment ware-wash sink has buildup of mineral deposits in basins.Bo Brothers LLC, 2004 Wyoming Ave., Wyoming, Sept 22. Regular inspection; out of compliance. Violations: A working bottle of water was located on the counter next to the pannini grill and was not labeled with the common name of the content. This was corrected during this inspection. The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Chicken wings in the lower refrigeration unit of the bain marie food in the prep area stored open with no covering. The chicken was covered during this inspection. Flour and sugar storage containers in the kitchen area are not labeled with the common name of the food. Both storage containers were labeled during this inspection. Containerized food observed being stored directly on the floor in walk-in freezer, rather than 6 inches off of the floor as required. Loose rubber door gaskets were observed on the freezer unit located in front of the fryer. Ambient temperature 12 degrees F. The person in charge stated that there is a new freezer ordered. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low-temperature sanitizing dishwasher in the bar area was 10 ppm, and not 50-100 ppm as required. The sanitizer was replaced and the machine chlorine residual in now 50 ppm. A black mold-like residue was observed on a lip of the face plate of the ice machine. The ice machine was cleaned and sanitized during this inspection. A buildup of dried food residue was observed on the grill portion of the pannini press. Dried food residue was observed on the housing of the deli slicer where the food product exits between the blade and the housing, a food contact surface. The PIC stated that the deli slicer was last used yesterday. The deli slicer was cleaned and sanitized during this inspection. The post can opener blade, a food contact surface, was observed to have dried black food residue and was not clean to sight and touch. The post can opener was cleaned and sanitized during this inspection. A buildup of grease and dust was observed on the end of the fryer and the wall next to the fryer. A buildup of static dust was observed on the fan guard inside the lower portion of the bain marie located in front of the oven. The fan guard was cleaned during this inspection. A buildup of static dust was observed on the fan guards in the walk-in cooler. A buildup of a tan-colored, mold-like substance was observed on the walls, hoses to the compressor unit, and base of the fan guard housing. An accumulation of dust was observed on the top outside surface of the oven. The top of the oven was cleaned during this inspection. The front outside surface and handle on the microwave oven has a build up of grime and is sticky to touch. The microwave was cleaned and sanitized during this inspection.
