The following are recent Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture. According to the agency: &#8220;Any inspection is a &#8216;snapshot&#8217; of the day and time of the inspection. An inspection conducted on any given day may not be representative of the over all, long-term cleanliness of an establishment. Also, at the time of the inspection, violations are recorded but are often corrected on site prior to the inspector leaving the establishment.&#8221;The information is taken from the inspection database at www.eatsafepa.com. Broad St., Hazleton: Regular inspection, out of compliance. Violations: The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Prepackaged rolls are not labeled to clearly indicate any &#8220;Big 8&#8221; allergen ingredients and/or the allergen warning statement. Shell eggs recently received at store observed sitting on retail floor not placed under refrigeration immediately. Floor in the meat cutting area is made of tiles that broken and is not durable, smooth, non-porous, non-absorbent. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in refrigeration equipment. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Observed deeply scored cutting boards not resurfaced or discarded as required located in rear meat cutting area. Old food residual build up observed on the slicer in front prep area. The food facility does not have a hand wash sink located in the front food prep area. Basement door located in the basement area of the food facility has a gap and does not protect against the entry of insects, rodents and other animals. Fan in rear kitchen area is not screened. Floor drain in meat cutting area has old greasy, food residual build ups. Deli meat was held at 45&#176;F in the front refrigeration unit in slicer area, rather than 41&#176;F or below as required. Meat moved to another unit. Meats, pork was held at 55&#176;F in the rear 3 compartment sink area, rather than 41&#176;F or below as required. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (deli meat) located in the front refrigeration unit by slicer and held more than 24 hours, is not being marked with the date it was opened. Old food residuals observed along rear edge of the cutting board on front refrigeration unit in area of slicer. Food facility does not employ a certified food employee as required. Test was taken this past week. Violations: Four dented items observed in dry storage area and intended for use in the food facility. Items were removed from use. Observed rust forming on the underside of the shelves in the walk-in cooler.Whitetail Preserve, 118 Boulevard Rd., Sugarloaf: Regular inspection, in compliance. Violations: Refrigerated, ready to eat, time/temperature control for safety foods held for more than 24 hours, located in the multiple refrigeration units, are not being date marked. Discussed date marking and provided guidance document. Observed rust forming on the bottom of the refrigeration unit in the work area. Observed a build up of syrup residue on the area behind the nozzles on the self-serve beverage machine. Observed spillage on the bottom of the freezer and in the refrigeration unit in the work area.Antojito&#8217;s Caf&#233;, 100 W. Broad St., Suite 104, Hazleton: Follow-up inspection, in compliance. Violations: Observed deeply scored cutting boards not resurfaced or discarded as required. Underside of board observed with black food staining. New food facility in operation more than 90 days and has not employed a certified food employee as required. Correct by 3/29/19. The food facility does not have the original certificate for the certified food employee posted in public view. Correct by 3/29/19. Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the reach-in cold hold unit and the walk-in cooler and held more than 24 hours, is not being marked with the date it was opened. Mops are not being hung to air dry. Food employee observed donning single use gloves without a prior hand wash. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Can opener, a food contact surface, was observed to have food residue and was not clean to sight and touch. Deli meat slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. Ice dispenser of soda machine, a food contact surface, was observed to have a mold-like buildup and was not clean to sight and touch. Soap was not available at the hand wash sink in the kitchen area. Ice cream in the walk-in freezer stored open with no covering. Women&#8217;s toilet room is not provided with a covered waste receptacle for sanitary napkins. Observed sugar and flour bins stored under 3 bay sink in the kitchen prep area, where it is subject to splash.Colonial Pancake House &amp; Restaurant, 2001 Wyoming Ave., Wyoming: Regular inspection, in compliance. Violations: The hand wash sink in the prep area being used as a food preparation sink as evidenced by an observed pot of potatoes in the sink. The pot of potatoes was removed during this inspection. Observed containerized food stored directly on the floor in walk-in freezer located in the basement, rather than 6 inches off of the floor as required. The items were elevated during this inspection. The hand wash sink in the wait staff area does not have single use towels, continuous towels or air drying device. An interview with wait staff during this inspection stated that they use a common towel. Violations: There is a leak in the ceiling on the right hand side, just inside of the entry way to the retail area. There is no food stored in this area. There is a pail catching the dripping water. Personal cell phone observed sitting on food prep table. Food dispensing utensil in sugar bin observed stored in the food and not with handle above the top of the food and the container. The hand wash sinks located in the food service areas and employee restrooms do not have water at a temperature of at least 100&#176;F.
